Specifications include, but are not limited to: Ice Cream should be a minimum of 10% milk fat by weight. 1.3.2 Soft serve ice cream should be ultra-pasteurized, a minimum of 4% milk fat by weight, refrigerated and ready to use. 1.3.3 All products should be creamy, flavorful, have color consistent with flavor and made with high quality ingredients. 1.3.4 Bulk ice cream, frozen yogurt and sherbet should be packed in three-gallon (3) paper tubs and clearly labeled. It is especially important that flavors containing nuts be clearly labeled. 1.3.5 At delivery, temperature of ice cream, frozen yogurt, sherbet and novelties should be below zero. 1.3.6 Partially thawed or refrozen products are unacceptable and will be refused
