Specifications include, but are not limited to: GENERAL REQUIREMENTS: PORK, HAM BONELESS BUFFET AND BACON, SLICED4.11.1 MINIMUM REQUIREMENTS FOR: Pork, ham boneless buffet4.11.1.1Catch weight cases will be allowed for this ITB.4.11.1.2Goods MUST be Tavern or D shaped4.11.1.3Goods MUST be whole, the size must be 1 pounds minimum to 20 pounds maximum.4.11.1.4Goods MUST be boneless and fully cooked.4.11.1.5 Goods requiring string or stretch netting will be allowed providing it complies with USDA regulations governing meat inspection.4.11.1.6No chicken or turkey will be accepted for this ITB.4.11.1.7ODOC will accept smoked or flavored Goods.4.11.1.8Maximum salt content to be no more than 355 mg per ounce.4.11.1.9Maximum fat content to be no more than 2 grams per ounce.4.11.1.10Maximum water content to be no more than 12%.4.11.1.11Goods may be injected with a solution injection to enhance performance, freshness, and safety. Injected solution must be in accordance with USDA Food Safety Inspection Service (FSIS) requirements.
