Specifications include, but are not limited to:. Meats, Seafood and Poultry: Fish and Seafood: Uncooked fish as specified herein must meet the PUFI (Packed Under Federal Inspection) Shield. Breaded products must bear either a PUFI or USDC (Department of Commerce) Grade Shield. Meat Products: Shall be in the state of refrigeration specified and shall meet the requirements accordingly. All products specified to be frozen shall be examined, graded and certified when requested, and identified in the fresh- chilled state only, prior to freezing. Chilled: The products shall be thoroughly chilled, but not frozen, in suitable temperatures (28-32 degrees) in accordance with good commercial practice and in excellent condition to time and place of delivery Frozen: The products shall be thoroughly frozen to an internal temperature not higher than 10 degrees F., prior to shipping and delivery, and shall be frozen not longer than 180 days.
