Specifications include, but are not limited to:CONTRACTOR'S RESPONSIBILITIES (GENERAL)A.Except as provided for within this document, the Contractor shall be responsible for all operating costs, including but not limited to, the items set forth below:All food costs.All labor costs, Social Security Tax, and unemployment insurance.All linens, towels, uniforms, and table linens, and all laundry service costs.All salaries, wages, and employee benefits payable to or on behalf of the Contractor's employees. All employees (including students) shall be employed by the Contractor in their own name, and the Contractor shall hold the College harmless from any and all claims, demands, or liability on account thereof.Maintenance of the food service premises used by the Contractor in proper condition and repair; replacement of all loss and breakage, and, at the expiration of the contract, surrender of same to the College in as good condition as when received, ordinary wear and tear and acts of God excepted.Replacement of the loss and breakage to the initial inventory of china, glassware, silverware, trays, and all other movablekitchen and serving equipment originally furnished by the College. Inventory of the above items must be taken not less than once a year with copies of shortage lists provided to the College. Replacement items must be ordered by the Contractor from suppliers within thirty (30) days after inventory list is presented to the College.Routine cleaning of food preparation and service areas. Busing of dishes and cleaning of tables in dining areas and cleaning emergency spills from floors. (Regular routine maintenance and cleaning of serving area floors shall be the responsibility of the Contractor.)Maintain clean, dry floors and equipment in the food preparation and service areas at all times.All taxes and insurance costs.All paper supplies including disposable plates, cups, utensils, and carryout boxes.All office supplies.All kitchen supplies.Removal of all trash and garbage to college provided waste receptacles.High fiber, whole grain options shall be offered on a daily basis, both as part of entrees, and as a regular item in the line service of the food units.The Contractor shall provide at no cost to the College, a nutrition awareness program that meets the following minimum requirements:Nutritional breakdown of entrees served
